Ingredients

10.6oz Nordic Catch Sashimi-Grade Salmon

1 tablespoon ponzu sauce

1 cup cooked brown rice
-
1 teaspoon rice vinegar
-
1 teaspoon toasted sesame oil

Furikake to taste
-
Nordic Catch Flaky Sea Salt

2 tablespoons mayonnaise
-
1 tablespoon sriracha
-
1 teaspoon soy sauce

1/4 cup chopped cilantro
-
2 scallions cut on a bias

1 Persian cucumber diced

2 cups micro greens
-
1/2 avocado sliced

1 jalapeño sliced
Poke
Directions
Place one hand on top of the filet and carefully run a knife horizontally along the bottom to separate the fish from the skin.
Cut the salmon into cubes as evenly as possible and toss with ponzu.
Warm rice and sprinkle rice vinegar and toasted sesame oil, toss to coat. Top with furikake and Nordic Catch Flaky Sea Salt.
Stir together mayonnaise, sriracha, and soy sauce.
Plate the rice, salmon, and veggies finishing with Nordic Catch flaky sea salt and spicy mayo sauce.
