About the Fish: Cod
Biology: Cod (Gadus morhua) is a cold-water fish native to the North Atlantic. It lives along the coasts of North America and Europe, as well as in certain Arctic areas.

Ingredients

10.6oz Nordic Catch Marinated Cod

1 cup jasmine rice

1.75 cup of water
-
4 heads of bok choy
-
1 tbsp soy sauce
-
1-2 tbsp of any stock you have

2-3 garlic cloves
-
3 Persian cucumbers
-
1 carrot, julienned
-
1/4 cup rice vinegar
-
1 tbsp avocado oil
-
1 tsp toasted sesame oil

1 Persian cucumber diced
-
1 tsp Nordic Catch Black Lava Sea Salt

1 tsp sugar
Sesame Cod Bok Choy
Directions
Jasmine Rice
Add 1 cup of jasmine rice and 1.75 cup of water to saucepan
Bring to boil, then reduce to a low simmer and add a lid
Allow rice to cook with lid on for 12-15 minutes
Salad
Thinly slice Persian cucumbers
Add the cucumbers, carrots, rice vinegar, avocado oil, sesame oil, salt, sugar to a mixing bowl
Allow to marinate for 10 minutes
Bok Choy
Slice bok choy in half
Add avocado oil to pan at medium heat
Brown and char the bok choy, then flip
Add soy sauce, stock, and garlic cloves
Cook until tender and charred
Sesame Cod
Add avocado oil to pan at medium heat
Cook for about 2 minutes on each side
