
Pan Fried Trout w/ Parmesan Cauliflower Rice

An easy one pan meal that makes clean up a breeze. Use pre-riced cauliflower to save time. This dish is loaded with protein, fiber, and nutrients.

Ingredients

10.6oz Nordic Catch Steelhead Trout
Pepper
2 tbsp Avocado Oil, divided
1 small head of cauliflower
1/4 cup grated Parmesan
2 cups micro greens
2 tbsp basil, chiffonade
1 lemon, cut into wedges

Nordic Catch Arctic Herb Sea Salt
Directions
Steelhead Trout
Pat trout dry with paper towels
Season with salt & pepper
Heat a non-stick pan over medium-high heat
Add 1 tablespoon avocado oil, place trout skin side up on pan
Pan fry until browned and lifts off pan easily (about 5-6 min)
Flip and cook on skin-side for another 3-4 minutes
Meanwhile... Cauliflower Rice
Break cauliflower into florets and pulse in a food processor until it resembles rice
Remove fish from pan, add additional 1 tbsp of avocado oil to pan
Add cauliflower "rice" to pan, and season with salt and pepper
Cook, stirring frequently for 3-4 minutes until cooked and starting to brown
Add parmesan cheese and cook another 1-2 minutes
