Boldly Calamari* Mint Chimichurri Pasta

Ingredients

Ā½ lb Boldly Calamari* Rings

Ā½ lb pasta of choice

Ā½ cup minced fresh mint

Ā¼ cup fresh lemon zest
-
1 tbsp lemon juice
-
1 tbsp crushed garlic
-
1 fresh Serrano pepper
-
Ā¼ teaspoon kosher salt
-
Ā¼ teaspoon freshly ground black pepper

Ā½ cup olive oil
Directions
Thaw the Boldly Calamari* Rings overnight in the fridge (approx. 8 hours).
Fill a medium-sized pot with water & boil the Calamari* Rings for 3-4 min until tender. Drain & set aside.
Chop the fresh mint, Serrano pepper, and garlic, and grate the lemon zest. Add these to a bowl with the lemon juice. Add olive oil and salt & pepper, and stir until well blended. Let this mixture sit and marinate. (*Chef Note: this has an even better flavor when left to marinate overnight!)
Add the Calamari* to a skillet with a touch of olive oil on medium heat. Fry on both sides for 5-6 min or until slightly golden brown. Add salt & pepper to taste.
Fill a large saucepan with water and boil the pasta until al dente. Drain and add to a serving bowl.
Pour the chimichurri sauce over the pasta and mix well.
Plate the pasta on each dish, topped with the Calamari* Rings and garnish with lemon zest & fresh mint. Enjoy!
