The marinated cod cooks in under 5 minutes, and the rest of this takes no more than 15 minutes. It’s healthy, delicious, and perfectly balanced.


About the Fish: Cod


Biology: Cod (Gadus morhua) is a cold-water fish native to the North Atlantic. It lives along the coasts of North America and Europe, as well as in certain Arctic areas.


Nutrition & Taste: Cod is a white and lean fish, making it a good ingredient for assorted dishes. It’s also full of nutrients, including protein, omega-3 fatty acids, vitamins B12 and D, and minerals. Chefs and gastronomes alike appreciate its mild, slightly sweet flavor and firm, flaky texture.


Cooking: One of the great things about Cod is that you can bake, grill, fry, or pan-sear it and it keeps its firmness and mild flavor. Popular Cod dishes include baked Cod recipes and fish and chips.

Sesame Cod Bok Choy

Ingredients

    • 10.6oz Nordic Catch Marinated Cod

    • 1 cup jasmine rice

    • 1.75 cup of water

    • 4 heads of bok choy

    • 1 tbsp soy sauce

    • 1-2 tbsp of any stock you have

    • 2-3 garlic cloves

    • 3 Persian cucumbers

    • 1 carrot, julienned

    • 1/4 cup rice vinegar

    • 1 tbsp avocado oil

    • 1 tsp toasted sesame oil

    • 1 Persian cucumber diced

    • 1 tsp Nordic Catch Black Lava Sea Salt

    • 1 tsp sugar

    Directions

      1. Add 1 cup of jasmine rice and 1.75 cup of water to saucepan

      2. Bring to boil, then reduce to a low simmer and add a lid

      3. Allow rice to cook with lid on for 12-15 minutes

      1. Thinly slice Persian cucumbers

      2. Add the cucumbers, carrots, rice vinegar, avocado oil, sesame oil, salt, sugar to a mixing bowl

      3. Allow to marinate for 10 minutes

      1. Slice bok choy in half

      2. Add avocado oil to pan at medium heat

      3. Brown and char the bok choy, then flip

      4. Add soy sauce, stock, and garlic cloves

      5. Cook until tender and charred

      2. Cook for about 2 minutes on each side
