About the Fish: Trout

Ingredients
10.6oz Nordic Catch Steelhead Trout
Nordic Catch Pure Flaky Sea Salt
Pepper to taste
1 garlic clove, minced
2 tbsp maple syrup
2 tbsp coconut aminos
2 tbsp smooth peanut butter
2 tbsp rice vinegar
1 tbsp toasted sesame oil
5oz dried soba noodles
2 scallions, cut on a bias
2 heads bok choy, cut lengthwise
1 bunch asparagus, trimmed
1 tbsp safflower oil
Nordic Catch Hot Volcano Sea Salt
1 tsp sesame seeds
Crunchy chili oil, to taste
Fisherman Sundried Seaweed, chopped (optional)

Preheat oven to 375F
Season Steelhead Trout fillet with salt & pepper

Mix in a bowl, garlic, maple syrup, and 1 tbsp coconut aminos
Evenly brush the glaze over the Steelhead Trout
Place in oven for 15 minutes or until cooked through

Whisk together peanut butter, 1 tbsp coconut aminos, rice vinegar, and toasted sesame oil
Cook soba noodles as per instructions
Drain noodles
Toss warm noodles and scallions in peanut butter sauce

Heat grill pan to medium-high heat
Toss veggies with safflower oil, salt to taste, and place on grill pan
Cook until there are grill marks, flip, and cook until grill marks on other side
