Cooking tips

1. Thaw Properly
Best: Thaw in fridge overnight (keep vacuum-sealed).

Fast: Submerge sealed loin in cold water (45–60 min).

Avoid: Hot water, microwave, or unsealing before thawed.

2. Prep & Trim
Pat dry after thawing.

Trim off darkened edges.

Square off for clean slices.

3. Slice Correctly
Use sharp sashimi knife.

Cut against the grain:

Sashimi: ¼-inch slices

Nigiri: Slightly thinner

For tataki/aburi: Sear all sides (10 sec/side), then slice.

4. Serve Thoughtfully
Pair with ponzu, yuzu kosho, or sea salt.

Use delicate garnishes—don’t overpower.

Serve chilled, fresh, and immediately after slicing.
