Ibérico Secreto is loved in Spain for its consistency and simplicity to accompany any dish. This thin, fan-shaped cut calls for simplicity in cooking and seasoning. Leave out at room temperature for a couple of hours, then sear it on a very hot pan without oil for 2 minutes on each side. The high fat content will crisp up on the outside and leave a juicy tender bite inside. Finish with sea salt and enjoy!

This Ibérico Pork is sourced from humane family-owned farms in Southern Spain. The slow growing black-hoofed hogs live nearly twice as long as their industrial counterparts and feed on nuts and grasses for a rich marbling and profound flavor.
This cut is called Ibérico Flank Steak, aka "tira de manto" similar to a thin pork belly, but leaner with a satisfying chew.

Iberian Pigs are the true lineage of this type of meat. Other types of "Iberico" may come from cross-bred pigs resulting in a different flavor profile and/or lower fat content.
