Cooking tips

1. Thaw
Best: Thaw in the fridge (6–12 hrs).

Fast: Submerge sealed loin in cold water (30–60 min), changing water frequently.

2. Sear (Tataki Style)
Pat dry.

Lightly salt or brush with soy sauce.

Sear all sides on high heat (10–15 sec/side).

Optional: Ice bath (30–60 sec) to tighten texture.

Pat dry again.

3. Slice
Chill briefly.

Slice against the grain, ~¼ inch thick.

4. Serve
Plate with ponzu, grated garlic or ginger, sliced onions, scallions, and shiso or daikon.

Optional: Toasted sesame oil or garlic chips.

5. Pairing
