A Rare Catch with Unmistakable Flavor

Opah isn’t something you typically find at the local seafood counter. Also known as moonfish for its large, round shape, this striking deep-water fish is valued by chefs for its rich flavor, firm texture, and impressive versatility.

Its naturally pink-to-orange flesh becomes white when cooked, remaining moist and substantial enough for high-heat preparations. The flavor is richer than many white fish, yet mild enough to pair with anything from citrus and fresh herbs to soy, ginger, and chili.

NOAA researchers identified it as the first fish known to circulate heated blood throughout its entire body, allowing it to remain active in cold, deep ocean waters. Its limited commercial availability also reflects the fact that opah is not commonly targeted in many fisheries.

That unusual biology, combined with its vibrant appearance and distinctively rich flesh, makes opah one of the most interesting fish you can bring to the table.

How to Cook Opah

Opah can be prepared much like tuna, swordfish, or another firm fish steak.

Pan-Seared

Pat the portion dry and season with salt and pepper. Sear in a lightly oiled pan over medium-high heat until browned on both sides and cooked through.

Grilled

Brush with oil, season generously, and grill over medium-high heat. Its firm texture holds together exceptionally well on the grill.

Oven-Baked

Bake at 400°F with butter, lemon, garlic, and fresh herbs until the center is opaque and flakes easily.

Air-Fried

Brush lightly with oil and season. Air fry at 390°F for approximately 7–10 minutes, depending on thickness.

Avoid overcooking. Opah’s natural richness is best enjoyed while the center remains moist and tender.
