Slimy texture? It's normal! This protective membrane is natural on this fish and does not mean it's gone bad! You can scrape it off with a butter knife and rinse under cold water.

The Arctic Char is a more delicate, tender version of salmon or trout. The thinner, softer fillet is uncommon to eat raw, it is best sautéd. Enjoy with light, simple ingredients.

Cook time: 5 minutes each side on medium-low heat, or 12 minutes in the oven at 375. A perfect medium-rare finish. Crank up the heat on the skin side, for a crispy finish.
