What Are Lamb Hind Shanks?
The hind shank comes from the lower portion of the lamb's rear leg. It is a hardworking cut with plenty of connective tissue, which makes it especially well suited to slow, moist cooking.
Given enough time, that connective tissue breaks down and creates the rich, tender texture that makes braised lamb shanks such a classic comfort-food dish.

How to Cook Lamb Shanks
For the best results, thaw the shanks completely in the refrigerator.
Season generously and brown them on all sides in a heavy Dutch oven or braising pan. Add aromatics such as onion, garlic, carrots, herbs, and your preferred braising liquid.
Cover and cook slowly at approximately 300–325°F until the meat is deeply tender and pulls easily from the bone, typically around 2½–3½ hours depending on the size of the shanks.
Red wine, stock, tomatoes, rosemary, thyme, garlic, cumin, and warm spices all pair especially well with lamb.
