What Is Albacore Tuna?

Albacore (Thunnus alalunga) is a tuna species known for its naturally lighter-colored flesh and milder flavor.

Compared with yellowfin, bigeye, or bluefin tuna, albacore has a softer texture and more delicate profile. It is sometimes referred to as white tuna because of its pale appearance.

How to Prepare Albacore

Sashimi

Slice cleanly across the grain and serve simply with soy sauce, ponzu, fresh wasabi, or citrus.

Crudo

Slice thin and finish with olive oil, citrus, sea salt, scallions, or yuzu kosho.

Tataki

Quickly sear the exterior over very high heat while leaving the center rare, then chill and slice.

Poke

Cut into cubes and lightly dress with soy sauce, sesame oil, scallions, or your preferred poke seasoning.

Pan-Seared

Cut the loin into portions and cook briefly over high heat. Albacore is relatively lean, so avoid overcooking to preserve its tender texture.

Cooking tips

1. Thaw Properly
Best: Thaw in fridge overnight (keep vacuum-sealed).

Fast: Submerge sealed loin in cold water (45–60 min).

Avoid: Hot water, microwave, or unsealing before thawed.

2. Prep & Trim
Pat dry after thawing.

Trim off darkened edges.

Square off for clean slices.

3. Slice Correctly
Use sharp sashimi knife.

Cut against the grain:

Sashimi: ¼-inch slices

Nigiri: Slightly thinner

For tataki/aburi: Sear all sides (10 sec/side), then slice.

4. Serve Thoughtfully
Pair with ponzu, yuzu kosho, or sea salt.

Use delicate garnishes—don’t overpower.

Serve chilled, fresh, and immediately after slicing.
