What Is Ivory King Salmon?

Ivory King Salmon is not a separate species. It is a rare, naturally occurring color variation of wild Chinook salmon.

Most King salmon store the red-orange pigments found in their natural diet. Ivory Kings have a genetic variation that prevents those pigments from accumulating in the flesh, creating colors that range from creamy white to pale pink or naturally marbled.

The appearance may be different, but it is still true wild King salmon with the rich texture and natural oils for which Chinook is prized.

Why Is Ivory King Salmon So Rare?

Only a small percentage of wild King salmon develop ivory-colored flesh. The variation cannot reliably be identified from the outside, so fishermen generally do not know they have caught an Ivory King until the fish is cleaned.

Each one is discovered by chance within an already limited wild Chinook harvest. It cannot be targeted or produced on demand, making availability seasonal, unpredictable, and extremely limited.
